The internship position will start with round two weeks in our Pilot Plant, where you will learn about different processes and also learn to master selected equipment under supervision of skilled dairy technicians.
The position is concerning development/test of a method for ripening cheese with enzymes, adding these enzymes (proteolytic) to a yellow cheese curd and a soft, mould cheese curd. Besides of this, to add these enzymes to cheese grains, so that the enzymes get incapsulated and mix with normal cheese grains in order to investigate if these encapsulated enzymes will diffuse into the remain curd. The internship report is expected to contain the results of the investigations and also search on ways to accelerate cheese ripening.
The internship will be carried out in our pilot plant, involving well skilled Dairy technicians and supported by an academic staff, including undersigned.
